There are lots of wonderful gifts and flowers in the shops for Mother’s Day but you can’t beat a home-made present that is made with love and especially one which is as delicious as this …

Lemon Curd Cake

Ingredients

  • 4 eggs
  • 225g Caster Sugar
  • 225g Self-Raising Flour
  • 225g Margarine/Butter
  • 1tsp Baking Powder
  • Finely grated zest of one Lemon

To decorate

  • Lemon Curd
  • 50g Icing Sugar
  • Lemon Juice to combine

What you need to do

  1. Preheat the oven to 180°C/160°C fan/Gas 4.
  2. Lightly grease and line with greaseproof paper two 20cm round or square cake tins.
  3. Beat the Margarine/Butter in a bowl with the Caster sugar until light and fluffy.
  4. Gradually add the eggs with the sifted Self Raising Flour/Baking Powder and mix well.
  5. Divide the mixture evenly between the two tins and level the tops.
  6. Bake in the oven for about 25 minutes until golden brown and springly to the touch.
  7. Allow to cool for 5 minutes before transferring to a wire rack to cool completely.
  8. To finish spread a layer of Lemon Curd over one of the cakes and the lemon icing on the top of the other then sandwich both together.

This Sunday is Mother’s Day, it’s a day when we show our mums and grandmothers just how special they are and how much we love and appreciate them often by giving them a gift, bunch of flowers and a card.

I always think that home-made is much more special, here is a quick and easy idea for a bright and colourful card that you can make at home or at school with children of all ages.

Mothers Day Card 2016

What you will need

  • White or coloured card
  • Brown wrapping paper
  • Different coloured paints
  • Paper plates
  • Scissors
  • Glue
  • Felt Tip

What you need to do

  1. Place each colour of paint onto a separate paper plate.
  2. Fold your card in half.
  3. Dip your hand into the green paint so that your palm and fingers are evenly covered.
  4. Press your hand onto your folded card to leave a hand print this will be the stems of your flower, then wash your hands.
  5. Dip your thumb into your chosen colour of paint and make a round thumb print at the top of your green finger prints this is the centre of your flower.
  6. Dip the tips of your fingers in a different colour of paint and make finger prints around your thumb print to form petals then wash your hands and allow the paint to dry.
  7. Using coloured card or brown paper cut out a plant pot shape and fold over the top to form the rim of the pot, write on your message and stick your pot onto your card.

Flowers are the most popular gifts given to mums and grandmas for Mother’s Day (on 30th March) often they can be quite expensive so why not make your own flowers complete with a vase, for just a few pence using items that can be found in your kitchen cupboard.

Carrier bag Mothers Day flowers

What you will need

  • Plastic/Carrier Bags (different colours)
  • Drinking Straws
  • Sticky Tape
  • Scissors
  • Clean Empty Jam Jar
  • Kitchen Foil
  • Small Bowl/Cup for a template
  • Pen

How to make your flowers

Flatten your plastic bags and using your template draw circles on them, they can be on the edge or in the middle of the bag.

Cut out the circles, they do not have to be perfect.

Put 2 or 3 circles together they can be the same colour or different colours.

Pinched flower
Holding the circles in one hand push your finger into the centre and pinch the back of the circles together and fasten with Sticky tape.

Flower on Straw
Tape your flower heads to the top of the straws, either one per straw or 2 or 3 to create a ‘double’ flower.

How to make your vase

Put your jam jar in the centre of a large piece of kitchen foil.
Bring the edges over and into the jar, press the foil firmly against the sides of the jar.
Cut off the carrier bag handles and tie them around your jam jar, trim the ends and scrunch to form a bow.

Arrange your flowers in your vase; you can cut the bottoms off the straws to give different heights.

Why not have a go, they don’t take long to make, Thomas will be giving these to his Grandma, I am sure she will love them.

During Fairtrade Fortnight 27th February – 11th March why not ‘take your step for Fairtrade’ (fairtrade.org.uk/step) and support this brilliant charity, your step could be to simply try a new Fairtrade product , swap brands of some of your favourite products to Fairtrade ones, hold a Fairtrade Chocolate tasting at school or home, or to ask your shop to stock more Fairtrade products.

Look for the Fairtrade Mark when you go shopping! Over 3000 products from coffees to flowers are Fairtrade certified.
