If you are lucky enough to live in a heathery part of the world, where bilberries abound, why not go out and pick some for this recipe. If you don’t have a handy supply of bilberries other soft fruit such as blueberries will be a fine alternative.
Ingredients
2 cups of plain flour
1 tbsp baking powder
1/4 cup caster sugar
1/2 tsp ground cinnamon
1 1/2 cups milk
1/4 cup melted margarine
11/4 cups bilberries or blueberries
Method
- Add the flour, baking powder, sugar, salt and cinnamon to a mixing bowl and stir round to mix all the ingredients together well
- In a jug mix together the milk, melted margarine and eggs
- Stir this into the dry mixture until well blended.
- Stir in bilberries or other soft fruit you are using
- Heat a greased frying pan
- Pour 1/4 cup of the batter onto the griddle
- Cook a couple of minutes each side
- This recipe makes between 10 and 12 pancakes depending on how large you like them!
